Have some leftover salmon (or other fish fillet) that you need to finish off? No one will know it’s just a leftover once you mix it with some dill (our crop of the month) in this month’s simple recipe.
Ingredients:
1 cup cooked salmon (or other fish)
1/3 cup mayonnaise (or plain yogurt)
1/4 cup grated radish
1 tablespoon minced chives
1 teaspoon minced dill weed
1 teaspoon grated lemon peel
Pinch of red pepper flakes
Salt and pepper to taste
For safety, try to remove all bones from the fish before using.
Put fish in a large mixing bowl and chop into pieces. Mix in the rest of the ingredients and season to taste.
(Wasn’t that easy?!)
Serve with your homemade bread or crackers or even atop roasted squash or eggplant. Enjoy!
